Spinach Mushroom Frittata
  • 1 10 ounce package frozen chopped spinach thawed and drained
  • 7 egg whites
  • 1 cup skim ricotta cheese
  • 3/4 cup freshly grated low fat parmesian
  • 3/4 cup chopped mushrooms
  • 1/2 cup chopped onions
  • 1/4 tsp. italian seasonings
Preheat oven to 375 degrees. Mix all ingredients in a large bowl until well combined. Spray 9 inch pie pan with Pam. Place mix in pan and back for 30 minutes. Cool for 20 minutes. Drizzle a little plain tomato sauce on each serving. Serves 6
