Fish Wrapped in Grape Leaves
(Psari Dolmatia)


Vegetable Oil SPray
10 ounce jar of grape leaves


Seasoning Mixture
2 tbs finely chopped parsley
2 TBS raisens
2 tbs red wine vinegar
2 bay leaves
1 tsp dried oregano, crumbled
1 tsp dried thyme, crumbled
1 small clove garlic, crushed or minced
1/4 tsp dried rosemary, crushed
1/4 tsp salt (optional)
1/4 tsp black pepper
dash of ground cinnamon or to taste

3 lbs. fish like snapper, rockfish or orange roughy

Preheat oven to 350 F. Lay out a sheet of aluminum foil large enough to enclose the fish completely. Spray the foil with vegetable oil spray.

Rinse and drain 10 to 12 grape leaves. Place some of the grape leaves on foil, overlapping leaves so no foil shows through. Combine the seasoning, mixture ingredients, mashing with a fork.

Rinse fish and pat dry and paper towels. Place the fish on the grape leaves and spoon the seasoning mixture into the body cavity. If there is any remaining liquid from the seasoning mixture, drizzle it over the fish. Use the foil to help you wrap the grape leaves over the fish, adding more rinsed and drained leaves, if needed, to enclose the fish. Wrap tightly in the foil and bake for 40 minutes. Let the cooked fish rest for about 10 minutes before unwrapping and serving.

*You can also place foil on the grill 3-7 minutes on each side.
